Sindhi Chicken/Mutton Biryani

 


                                               SINDHI CHICKEN/MUTTON BIRYANI

 Ingredients

·         1/2kg Chicken/Mutton                                             

·         1/2kg Rice(Soaked for one Hour)

·         Curd(1 Cup)

·         5 Tomato

·         5 Lemon

·         2 Potatos(half boiled)

·         2 tsp Salt                                                                         

·         1 tsp Red Chilli Powder                                             

·         5 or 6 Punes(Alo Bukhara)                                       

·         2 Fried Onion(Chopped)                                          

·         1/2Cup Mint and Corriandr(Dhanya)                  

·         2 Green Chilli(Chopped)                                          

·         1 tsp Ginger Garlic Paste                                              

·         1 tsp Corriander powder                                          

·         1 tsp Black Pepper                                                      

·         5 or 6 Clove(longh)                                                     

·         1 tsp Cumin (zeera)                                                    

·         2 Bay leaf(Taiz Pata)                                                   

·         4 Green Cardamom(ilachi)                                      

·         2 Cinemon(Dar Chini)                                                

·         2 Black Cardamon(Optional)                                   

·         ½ tsp Yellow food colour                                          

·         Kwera Essence(few drops)(Optional)                

·         Method

·         Take a pan and put a cup of oil in it.

·         Boil the mutton not Chicken.

·         Fries the onion when it turns light brown then separate some fried onion for garnishing                                                                                        

·          Add gingergarlic paste and green caradamon.

·         Add all condiments and fry.

·         Add potato and curd.

·         Add prunes tomato and green chilli.

·         Cook for 2 minutes.

·         Boil the rice(Half boiled)

·         Add Rice and add yellow food colour.

·         Cook on high flame for 5 minutes and on low flame for 10 minutes.

·         Then dish out and serve it.
